Made this tonight. So super easy. I made it with homemade vegan ricotta cheese. This dish is delicious!

Thank you for this recipe, it looks delicious! I’m vegan so I’m going to attempt it with a vegan cashew ricotta instead. Just a quick question – does the honey in the recipe make a difference to the overall taste? Thanks for all the recipes!

I tried this recipe this week. It was easy and best of all delicious. I did add a little shredded mozzarella on the top of the eggplant prior to baking. Sorry, I forgot to take a photo.
