Honey Vanilla Fruit Salad – Fresh chopped fruit coated in a sweet orange honey vanilla dressing.

This recipe takes a short cut by using a jar of pre segmented mandarin oranges packed in fruit juice.  The oranges go into the fruit salad and the mandarin orange juice gets combined with honey and vanilla to make the dressing.

As the fresh cut fruits rest in the dressing, they will begin to release some of their juices creating extra sauce.  Be sure to stir the fruit salad well before serving.

Store in a sealed container in the refrigerator for up to three days.

Ingredients
 

  • 1 pineapple peeled, cored, and chopped
  • 16 oz. strawberries stemmed & quartered
  • 12 oz. blueberries
  • 4 kiwi peeled & sliced
  • 1 (23.5 oz.) container mandarin oranges in juice
  • 1/4 cup honey
  • 2 teaspoons vanilla extract

Instructions

  • In a large bowl, add the pineapple, strawberries, blueberries, and kiwi.
  • Drain the juice from the mandarin oranges (keep the juice). Add the orange segments to the bowl with the rest of the fruit.
  • In a medium bowl, add 3 tablespoons of the reserved mandarin juice. Add the honey and vanilla. Whisk to combine.
  • Pour the honey vanilla sauce over the fruit. Gently stir until the fruit is well coated.

    HUGE hit at a BBQ party. Asked for the recipe by several people. Simple and DELICIOUS. I did make it the day before the party and it was still great the next day. I saved some at home from the batch and we ate it a few days later, still fresh and delicious!

    1. I did and wish I didn’t. It’s fine, but they were overly sweet and the brightness of the rest of the fruit made the pineapple chunks look old.

    I used red and green grapes, blueberries, raspberries and blackberries, along with small cups of mandarin oranges. I stirred in the sauce just before serving. Huge hit!

  5. Does the sauce keep the fruit from turning brown? How long will it last in the refrigerator before serving at its peak?

  6. Never heard of stemmed strawberrys
    Before why do we do this?

    And how do you stem strawberries?
    Planning to make this today.

    1. Hi Judy, Stemmed strawberries means strawberries with the stems cut off. Most people don’t like the taste of the green strawberry stems.

      Use a straw! Run the straw from bottom of strawberry thru the stem’. Fast and almost “mess less”
