Ingredients
8mediumrusset potatoes
1cupsour cream
4tablespoonsunsalted butter
1teaspoonsalt
1/4teaspoonground black pepper
1/4 to 1/2cupchicken broth
2cupsshredded cheddar cheese
3green onions-sliced
2 tablespoons bacon bits or crumbles
Instructions
Peel the potatoes and chop them into cubes (about 2”x2”).
Place the potatoes in a large pot and cover with water. Boil the potatoes until the potatoes are cooked through (about 15 minutes). Drain the water from the potatoes using a colander. Return the potatoes back to the hot pot.
Mash the potatoes with a potato masher. Add the sour cream, butter, salt, and pepper to the potatoes and stir to combine. Stir in the chicken broth until the mashed potatoes are your preferred consistency.
Preheat oven to 350 degrees F. Spray a 9x13 inch baking dish with cooking spray.
Spread the potatoes into the baking dish. Sprinkle evenly with cheese. Cover the dish with foil and bake for 20 minutes.
Immediately after removing the dish from the oven, sprinkle with the green onions and bacon bits.
