Ingredients
1cupquick cooking rolled oats
2cupsall-purpose flour
1cupgranulated sugar
2tsp.baking powder
1/2tsp.baking soda
1/2tsp.salt
1tbsp.ground cinnamon
1 1/4cupsskim milkor whatever milk you like
½cupapple sauce
2tsp.vanilla extract
2large eggs
2tbsp.canola(or your preferred cooking oil)
2medium applespeeled and diced
Instructions
Preheat oven to 350 degrees Fahrenheit. Spray a 9x5 inch loaf pan with cooking spray and set aside.
In a large bowl, add the oats, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix until well combined.
In a medium bowl, add the milk, apple sauce, vanilla, eggs and oil. Whisk until well combined.
Add the wet ingredients and the apples to the dry ingredients. Stir until just combined and all of the flour is moistened. Do not over mix.
Pour the batter into the prepared loaf pan. Bake for 55-65 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs, but no raw batter. Cool for 10 minutes in the pan. Then, remove the bread from the pan and place it on a wire rack to cool completely.
