Ingredients
2tbsp.olive oil
4cupschopped zucchini(about 3 medium zucchini)
2cupssliced white mushrooms(about 6 oz.)
1cupchopped yellow onion(about 1 small onion)
3garlic clovesminced
1(28 oz.) cancrushed tomatoes
1(15 oz.) cantomato sauce
1(6 oz.) cantomato paste
1/4cupwater
2tbsp.sugar
1tbsp.dried basil leaves
2tsp.dried oregano leaves
1 1/2tsp.salt
1/2tsp.ground black pepper
Instructions
Add the olive oil to a 12 inch, high-sided skillet* and place over medium-high heat for 2 minutes. Add the zucchini, mushrooms, and onion. Cook for 10 minutes, stirring occasionally.
Add the garlic. Cook one minute, stirring often.
Add the crushed tomatoes, tomato sauce, tomato paste, water, sugar, basil, oregano, salt, and pepper. Stir to combine.
Reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.
