This Chicken Gnocchi Soup Recipe is a copycat of the famous Olive Garden dish. It’s creamy, comforting, and can be made in under 30 minutes.

I love Olive Garden’s creamy and comforting chicken gnocchi soup. And, I really love being able to make it myself at home in just a few minutes.
How To Make Chicken Gnocchi Soup

- Melt butter in a large soup pot.
- Add diced onion, grated carrots, and sliced celery.
- Add thyme, salt, and pepper.
- Cook until the veggies are soft.
- Add minced garlic and flour.
- Cook, stirring often, for two minutes.
- Add the half & half one cup at a time, stirring after each addition.
- Add chicken broth.
- Bring the liquid to a simmer.
- Add rotisserie chicken, potato gnocchi, and chopped spinach.
- Cook for five minutes
I like to serve mine with grated parmesan cheese and bread sticks for dipping.
How To Store
Store leftovers in a sealed container in the refrigerator for up to 5 days. As the soup rests, the dumplings will soak up a lot of the liquid. So, I like to add one to two additional cups of chicken broth to the soup as I reheat it.

Ingredients
- 4 Tbsp unsalted butter
- 1 cup diced yellow onion
- 1 cup grated carrots
- 1/2 cup thinly sliced celery
- 1 tsp dried thyme leaves
- 3/4 tsp salt
- 1/2 tsp ground black pepper
- 3 minced garlic cloves
- 1/4 cup all-purpose flour
- 2 cups half & half
- 4 cups chicken broth
- 2 cups rotisserie chicken -skin removed and meat pulled apart into bite-size pieces
- 17 oz. dried potato gnocchi -found in the pasta isle
- 1 cup coarsely chopped spinach
- Optional: Grated parmesan and bread sticks for serving
Instructions
- Add the butter to a large soup pot and place it over medium-high heat. Once the butter is melted, add the onion, carrots, and celery. Stir to coat the veggies in the butter.
- Add the thyme, salt, and pepper. Cook, stirring occasionally, until the veggies are soft, about 7 minutes.
- Stir in the garlic. Then, add the flour. Cook, stirring often, for two minutes.
- Add the half & half one cup at a time, stirring after each addition.
- Add the broth. Stir well. Bring the liquid to a simmer.
- Add the chicken, gnocchi, and spinach. Adjust the heat so the liquid stays at a simmer. Cook for five minutes, stirring occasionally.*
- Serve with grated parmesan cheese and bread sticks for dipping.

This is one of my favorite soups now that the cold weather is approaching! The gnocchi really makes it.
I have tried a couple of chicken gnocchi soup recipes but this one is the one I will make again and again. It’s so easy, especially using a rotisserie chicken. We served it with garlic bread and there wasn’t one drop left.
