Buffalo Chicken Zucchini Boats – a simple stuffed zucchini recipe that only calls for four ingredients.
Hollowed out zucchini squash is stuffed with cooked ground chicken mixed with buffalo wing sauce; topped with cheese; and baked.
This recipe is a great way to use up all that summer zucchini! Â And, it’s great for those people who are looking for high protein, low carbohydrate dinners.

Buffalo Chicken Zucchini Boats Recipe

Ingredients
- 4 small-medium zucchini about 1¾ pounds
- 1 lb. ground chicken
- 1/2 cup Buffalo Wing Sauce not regular hot sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400 degrees F. Spray a 9x13 inch baking dish with cooking spray.
- Place a large non-stick skillet over medium-high heat. Add the chicken and break it apart with a wooden spoon. Cook for 7-9 minutes, until the chicken is cooked through, stirring occasionally.
- Remove the skillet from the heat. Stir in the buffalo wing sauce.
- As the chicken cooks, cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving a ¼ inch thick zucchini boat. Place the zucchini in the baking dish cut-side up.
- Spoon the chicken mixture into the zucchini boats. Sprinkle the zucchini evenly with the cheese.
- Cover the baking dish with foil. Bake for 35 minutes.

I don’t like chicken so I used beef. My wife doesn’t like spicy so we used teriyaki sauce. Neither of us like zucchini so we used broccoli. We served it over rice it was delicious!🤨

I used the buffalo hot sauce, just because I had three bottles in my cabinet lol. If I wouldve used wing sauce instead, would there have been more flavor? It tastes like it’s missing something.. or maybe I’m used to ground Turkey not ground chicken. thoughts?

First zucchini boat I ever made and it was DELICIOUS. I addrd three Italian sweet sausage links (deskinned and crumbled) to the ground chicken and added extra wing sauce to compensate fir extrs meat. I was bringing this dish to s friends house for dinner and my friend told me her husband doesnt like griund chicken. It worked snd heclived it too.

I find if you cut the zucchini and put it in the oven while you brown the meat, it cuts down on the cooking time needed after you stuff them. Love this recipe, my family and I use it all the time!
Loved these!! I did ground turkey and added 2 TBSP of coconut milk (thicker canned variety) mainly because I had it already opened and I e to pair it with hot sauce to cut the heat just a smidge. Very tasty! We doubled the recipe (family of 5) so I have leftover meat I will totally use to stuff more boats this weekend!

Yummy! I don’t like anything spicy so I made my husband like the recipe but made mine with bruschetta mixed in instead of wing sauce. It was a hit!

I think the 37g of protein for 2 boats is a bit high, especially with ground chicken. The other nutritional info seems about right.
4oz ground chicken is 22-30 g protein, depending on different brands I’ve seen, and 1/4 cup cheese is 5-10 g depending on brand. It’s feasible there could be 37 g of protein in this…
We decided to cook the scooped out zucchini and add it to the buffalo chicken instead of tossing it out.
Mu husbandi is not a zucchini fan. Could I mix the chicken mixture with brown rice for him? Thanks.

just add a little ranch if it has too much heat, the ranch will tame down the spice.
Not at all, but depending on the buffalo sauce it can be salty. These are fantastic. My husband loves them.
Also, you can get different levels of heat in your buffalo sauces.
