I’ve been working on this meat lasagna recipe for over a year.

I set out to make the best traditional lasagna recipe.  Every time I made it, I’d make little tweaks here and there until I thought it was just right.

I think I finally nailed it!

How to make lasagna:

  • Make the meat sauce
  • Make a ricotta cheese mixture
  • Boil the pasta
  • Assemble the lasagna
  • Bake
  • Cool
  • Enjoy

How to layer lasagna:

  • Spread a thin layer of pasta sauce in the bottom of a baking dish
  • Make a layer of cooked lasagna noodles
  • Spread an even layer of the ricotta cheese mixture
  • Spread an even layer of meat sauce
  • Repeat those layers two times
  • Top it with a final layer of noodles, sauce, mozzarella, and parmesan cheese

How to bake lasagna:

  • Cover the baking dish with aluminum foil
  • Bake at 350 degrees F for 45 minutes
  • Remove the foil and bake for 15 more minutes
  • Let the lasagna rest for at least 15 minutes before slicing

Ingredients
 

  • 1 lb. ground beef
  • 1/2 lb. sweet Italian sausage
  • 1 medium onion -chopped
  • 2 garlic cloves -minced
  • 1 (15 oz.) can tomato sauce
  • 1 (15 oz.) can crushed tomatoes
  • 2 (6 oz.) cans tomato paste
  • 1/2 cup water
  • 2 tablespoons sugar
  • 3 teaspoons salt -divided
  • 3 teaspoons Italian seasoning -divided
  • 1 1/2 teaspoons dried basil leaves -divided
  • 1/4 teaspoon ground black pepper
  • 1/4 cup minced fresh flat-leaf parsley -divided
  • 2 cups shredded mozzarella cheese -divided
  • 15 oz. (1 ¾ cups) whole milk Ricotta cheese
  • 1/2 cup grated parmesan cheese -divided
  • 1 large egg
  • 12 lasagna noodles

Instructions

  • Preheat oven to 350 degrees F.
  • Make the meat sauce. Add beef and sausage to a large skillet over medium-high heat, breaking it apart with a wooden spoon. Add the onion and garlic. Cook until meat is browned, about 6-8 minutes. Drain the fat from the meat. Return the meat to the skillet.
  • Add the tomato sauce, crushed tomatoes, tomato paste, water, sugar, 2 teaspoons salt, 2 teaspoons Italian seasoning, 1 teaspoon basil, and the black pepper. Stir until well combined. Cover and reduce the heat to low. Simmer the sauce for 30 minutes. Stir in 2 tablespoons of the minced parsley.
  • As the sauce cooks, make the ricotta mixture. In a large bowl, add 1 cup mozzarella, the ricotta, ¼ cup parmesan, 2 tablespoons of the parsley, the egg, 1 teaspoon salt, 1 teaspoon Italian seasoning, and ½ teaspoon basil. Stir until well incorporated.
  • Cook the pasta al dente, according to it’s package directions.
  • Assemble the lasagna. In a 13x9 inch baking dish, add a very thin layer of meat sauce (about ¼ cup). Layer 3 lasagna noodles, ⅓ of the ricotta mixture, and 1 ½ (level) cups of meat sauce. Repeat the layers twice.
  • Add a final layer of the remaining noodles, meat sauce, 1 cup mozzarella, and ¼ cup parmesan.
  • Cover with foil that has been sprayed with nonstick cooking spray. Bake for 45 minutes. Remove the foil. Bake 15 more minutes.
  • Let the lasagna cool for 15-20 minutes before cutting.

    Wonderful flavor for the sauce and simple for any level of cooking skills. It’s not often I want to lick the pan after making the sauce. I used ready to bake noodles to save some time.

      This was a very delicious recipe. It’s a definite keeper! My husband asks for lasagna every year for his birthday and I decided to try something a little different.     This was really delicious. I used 2 jars of spaghetti sauce instead of making the sauce from scratch but followed the rest of the recipe.

    I had to sub out many ingredients and it still came out outstanding. I used savory Impossible protein instead of beef. I used cottage cheese instead of ricotta just because that’s what I had on hand. I used a Mexican shredded cheese mix instead of mozzarella also because that is what I had at home. I had no parsley. I had no Italian spices. Like I said, it’s still came out delicious and I would totally make it again.

    Amazing! To me, it’s all about the sauce and this one doesn’t disappoint!! I personally add 1/4 tsp of red chili flakes to the sauce mixture to add a little heat to the sweetness of it.

    I used this as my baseline for making for my first lasagna. I had less noodles (used a smaller pan) also added spinach to the ricota level… and no in my sugar since I needed to add a large amount of store bought sauce too. But thank you…… it came out wonderful. I’ll be making Lasagna again.

  11. Trying this recipe for the first time, and I have a suggestion about pan size. I have a 17 1/2= X 11 3/8″ pan. I have to hope doubling the recipe won’t be too much for the pan. If the recommended pan size could be adjusted with the recipe size alterations, it would be pretty handy. On the plus side, I know what to do with any ingredients that don’t fit!

    Made some changes to seasonings but just to my taste 1st time was right off the recipe then made changes for my taste but it’s great. Thanks.

    Made it again and this time I didn’t have any ground beef so I used one of my steaks (ribeye) used my meat grinder on it and andouille sausage now I’ve been asked only to make it that way from now on, I used the small cutter on my grinder for both and did then together, then just took the grinned meat right to the pan after that followed the receipt and man it was awesome. I know this adds to the price, but for me I can live with it.

    My moms always made lasagna “hot dish” and I finally made it with her once and we did this recipe and I swear it was almost as good as my grandmas, that’s a real compliment too

    1. Hands down! By far the best lasagna recipe ever. My only hack to it, I roll out the cheese portions between parchment paper and freeze them. Sized to your pan, adds a perfect layer of cheese.

    This lasagna had the most flavor and best taste of any lasagna I have made! Adding fresh basil, parsley and mozzarella made this recipe stand out. The sauce had so much flavor. I don’t usually include italian sausage with my “meat” lasagna, but it definitely made sauce more flavorful! I will use this recipe as my goto ALL THE TIME from now on!

    I’ve been using this lasagna recipe for 5 years. I make lasagna at least twice a year in mini loaf pans and freeze them for easy eating later.

    1. What’s the secret to freezing and then thawing/heating lasagna so the original texture is preserved? Please be detailed and explicit, as I struggle with trying to freeze prepared food to eat at a later date but I don’t know where I go wrong. It sounds like you’ve got it down pat!

        I always freeze it in my container and put a layer of aluminum foil on top before I put my lid on my container. Freezing smaller portions help me also. I use plastic Chinese restaurant take out containers and find they make great freezer containers as long as you use the foil. They sell them at Walmart, I just noticed as well which is also great.   19. I have not made this YET but plan to tonite. My husband does not like italian sausage or any sausage in lasagna, any recommendations on tweaks to get the sausage flavor? I plan to use more ground beef but need help on flavor.

    1. Yes, just don’t use any Italian sausage. Stick with only ground beef! You could just add a little extra ground beef in replacement. (I also don’t like sausage in lasagna)

    2. To add flavour to your sauce without adding the sausage try adding pork ribs and let them simmer in the the sauce four a couple hours. Remove and save for another meal at a later date.

    The sauce recipe is very similar to what I have always made for many of my dishes. I used to just throw a lasagna together without measing anything and the family loved it. I decided to follow this recipe very close and the family went crazy over it and asking if I did something different. So, I will definitely be using this recipe in the future.     Oh my god! I faught taking a piece BEFORE the 15 minute “rest time” – and lost. So eating it, scalding my mouth, I thought, “not bad (& OUCH!)”..
    But later on.. if I hadn’t KNOWN I was the one who made it, I would’ve NEVER believed I cooked it! It was/is DELICIOUS!!! And that’s coming from someone who’s eaten at more than a few “Two Guys from Italy” restaurants in the San Fernando valley! (Very authentic, home style Italian cooking)

    I thought I’ve been using this recipe for years but today when I opened it up I thought it was a bit different. Did this recipe used to say simmer for an hour and half? Also didn’t use to mix the ricotta with the mozzarella and there was a layer of sprinkled parm after each meat sauce layer. Everything else was exactly as I remembered it. Our family’s favorite!!     1. Okay I have been tripping trying to figure out the exact same thing. I could’ve sworn the simmer time was an hour and a half and that it said to sprinkle the parm just like you said. I found this recipe a while ago, never saved it (like a noob) and have been scouring the internet to find it again and I thought this one was it but the simmer time was really throwing me off

    This was a great recipe, but a little too salty. Also, I would add 3 cups of mozzarella cheese to the cheese mixture to make it creamier and less grainy. Otherwise, very flavorful and sets up well!

    1. Did you use store bought shredded cheese? I find shedding my own, especially parmesan, makes a world of difference in the grainy factor.

    I have never made lasagna before, so I scoured the internet for a “traditional” recipe, one that would remind me of my childhood. This is it. It was so easy to make and my family was impressed. I loved it! The only modification I made was that I added another cup of mozzarella to the top, for just that extra cheesy layer. I will definitely make this again.

    Excellent! My mother-in-law said it was the best lasagna she’s ever had! I only had one can of tomato paste so I used a 28 oz can of crushed tomatoes instead of the 15 oz size. It turned out great. I am saving this to my favorites folder.

  47. As others said, the cheese mixture as outlined in this recipe wouldn’t cut it. I used 32 oz of ricotta and 1.5 cups of mozzarella. That seemed to be just right.
    For my and my husband’s taste, this was way too tomato forward. We mostly tasted sweet tomato. The taste of the meat is completely lost in the tomato sauce. We bought really good quality beef and sausage, but you couldn’t tell that.
    After eating a slice, I just taste salt and sugar. There was too much of both in this recipe.
    The order of the steps made the cook time longer. The step to cooking the lasagna noodles should occur closer to the direction to simmer the meat sauce. It takes a while for that quantity of water to boil. I figured this was a no-boil recipe since I didn’t see the direction to boil earlier. I was wrong.
    The lasagna was not bad, but definitely not the best that I’ve tasted. I probably won’t make it again.

    The absolute best lasagna recipe ever. I’ve made this for the family at least 5 times now, 6th on the stove now. It is absolutely amazing. I usually have to substitute the sweet italian sausage for the mild italian sausage because my market is always out so I add another two tablespoons of sugar. I follow this recipe exactly as written (besides the sausage and sugar modification). One thing I would like to mention regarding the instructions. It says to preheat the oven to 350 as step one but then says to cook the sauce for 30 minutes so your oven will be on all that time. I usually wait until I’m ready to assemble to turn the oven on.

  51. I have something to say about this recipe. This is actually a problem I have with many recipes, and I honestly don’t know if it’s me or what. Probably part of it is me. The prep time is listed as 20 minutes. 3 HOURS LATER I’m putting the lasagna in the oven! Not even exaggerating. I began at 8:15pm and did not put it in the oven until 11:15pm. Now, I’m no gourmet chef, but this is not my first rodeo in the kitchen. I looked at that prep time and knew it would take me 45 minutes at a minimum (because it always takes me a lot longer than any prep time ever listed in the history of recipes).

    I pretty much don’t really care if it tastes good or not. I’m exhausted and it was not fun. I had zero interruptions. I didn’t have everything laid out before I started – and that may account for why it takes me so long – but I had easy access to everything and I just kind of got things out as I went. Still, 20 minutes versus 3 hours? I think the author here dramatically underestimated the real time for prep here. This is lasagna, after all. I followed the recipe almost exactly as listed with the exceptions being I didn’t use fresh parsley and I used minced garlic from a jar (not that the recipe states to mince it by hand).

    I’m open to suggestions. Please, give me some tips to cut down on prep time!!

  52. This recipe is delicious. I put thin layers of meat sauce but always seem to barely have enough meat sauce for the top., It doesn’t seem to matter which recipe I use.

  53. The flavor is great but the ingredient amounts are off. Ended up with scant cheese and meat layers instead of generous
    Would make again but add some red wine to meat sauce to make more and additional cheese

    I added a bit of ground red pepper and used layers of asiago, parmesan, mozzarella and cheddar on top of the sauce in each layer, and used more ricotta and fresh basil from the garden, and this is by far the best recipe I’ve tried for lasagna! Even the picky three-year-old loved it after not wanting to try it!!! Printed and saved for future use!!

    Made this last night! Delish and I’m kinda picky with lasagna! I think I’ll use the sauce recipe for spaghetti too! I used the oven ready lasagna noodles, increased the ricotta mixture, thanks to other comments. Not a huge fan of sausage but I did use about half of the listed recipe amount. Also 1 cup mozzarella on the top really meant 3 right? That’s how I read it. Lol. Thanks for my go to lasagna recipe!

    The best lasagna ever! I did add shredded zucchini to the meat mixture once the meat was browned. Also I used diced roasted tomatoes instead of crushed tomatoes. I was told that this lasagna rates right at the top with my meatloaf! I make REALLY good meatloaf…

    I LOVED this recipe. I skipped the Italian sausage because I didnt want to go to the store during the peak of the pandemic and I put in fresh herbs from the garden in the sauce.   70. Used this recipe tonight and loved it! My husband is a lasagna lover and this was perfect for him. Our only change next time is going to be doubling up on the ricotta mix because there seemed to be not enough to do all the layers and have a sufficient amount on each layer.

    1. I agree on the ricotta mix amount also. I tried to be as liberal as possible on the layers and it wasn’t enough. I’d boost it to 2 1/4 ricotta and 1 1/4 mozzarella at least. Cheeser the better! 😉

    2. Lasagna is a perfect make ahead dish. If you chill it in the refrigerator on Thursday, you can bake it on Saturday for company. You can also freeze it (baked or unbaked) up to a month or even A little longer, and then reheat/bake whenever.

      1. Hello, do you prepare it and leave in the fridge and then not put in oven until 2 days later? Did not know you could do this??

    I made this recipe for the first time for dinner guests. I followed the directions to a t with the exception of I substituted wine for water and after I removed the tinfoil I raised the temperature to 375 degrees. Absolutely everyone thought this was the best lasagna they’ve ever had. I was so happy that it turned out as good as it did. I liked it so much we’re getting together with friends later this week and I’m making the same dish. Thank you for your recipe.

    This is the BEST Lasagna recipe I have ever followed. The final product was so good that we want to eat the whole batch. I thought I cut too big of pieces for the women that were at the dining room table. But I was wrong it wasn’t big enough. The ate the whole piece and wanted more. I followed the recipe to the t. with one exception instead of the half a glass of water I put a half a glass of red wine. I will definitely make this again.

    Love this recipe! Will make more sauce at later date to freeze & always have on hand. The ricotta cheese mixture will be perfect for stuffed shells or manicotti, it was so flavorful. I doubled the recipe & made 2 small containers (1) to freeze & (1) for the in-laws & (1) 9×13 for company that’s in the freezer.

    First, let me explain that I don’t cook. But, I retired, so I have to do something. So my husband suggested I made lasagna. How hard can it be? After spending an afternoon, collecting ingredients, studiously following the recipe, baking it, letting it cool. I presented him, with what we both decided was the best lasagna ever.     Best lasagna ever! Hands down ! I have never had any better even in Italian restaurants! Easy to prepare. Had my family over for Sunday dinner and they just loved it too! My new lasagna recipe !! Thank you !

    1. In with the cheeses:

      In a large bowl, add 1 cup mozzarella, the ricotta, 1/4 cup parmesan, 2 tablespoons of the parsley, **the egg**, 1 teaspoon salt, 1 teaspoon Italian seasoning, and 1/2 teaspoon basil.

    2. As the sauce cooks, make the ricotta mixture. In a large bowl, add 1 cup mozzarella, the ricotta, 1/4 cup parmesan, 2 tablespoons of the parsley, the EGG, 1 teaspoon salt, 1 teaspoon Italian seasoning, and 1/2 teaspoon basil. Stir until well incorporated.

  84. I made the lasagna for guests, but they were delayed for dinner and may not arrive I am hoping this will freeze for when my son comes. Any suggestions about freezing?

    1. It may be far too late, but lasagna freezes beautifully. Cut your pieces (otherwise the whole pan takes *forever* to defrost), then wrap in wax paper & tin foil (or a freezer bag). You can reheat slowly in an oven, or pretty quickly in a microwave.

    I prepared this recipe last Saturday. We invited our neighbors over to join us for dinner. Everyone loved it. My neighbors said it’s better than what you can get at the Italian restaurants. My wife loved it too. My only adjustments to the recipe were to use Herbs of Provence (Didn’t have Italian Spices) fresh basil instead of dry (only had fresh on hand), no parsley and fresh Mozzarella. It took about an hour of preparation time before I had everything in the oven but it was well worth it.

    Best lasagna ever! I am not a fan of lasagna in general but my husband loves it. When I found this recipe & I wasn’t too sure I wanted to make it due to the ricotta cheese BUT I figured I’d give it a shot – I am SOOO glad I did! We both love it. Give this recipe a try, it will not disappoint!

    1. My husband isn’t a fan of ricotta so I always replace it with cottage cheese..never will I use ricotta again. The cottage cheese is to die for!

    I made this recipe like two months ago for my husband and his parents and it was a huge hit. Well we just found out my mother-in-law has cancer and we are getting together for Easter and having a big BBQ with all her kids and everyone else in the family. She lives right next door to me and she walked over to my house and asked me to make the lasagna that i had made two months ago. She said it was her favorite and really wanted it.     This was a GREAT RECIPE!
    It took me a lot longer to prep than 20 minutes (1.5hrs)
    I would suggest using more tomato sauce and tomatoes. I used fire roasted diced tomatoes.gave it added texture and flavor. I used Mozzarella cheese in slices, made it easier to spread ricotta and meat sauce between layers without moving noodles around. I like lots of noodles so I made a 4 layer Lasagna. Thin additive layers in between.
    I will definitely make this again!

I knew I was using a full two pounds of meat, so I had already adjusted the sauce with extra tomatoes and an extra can of tomato paste, but I didn’t think about adjusting the cheese. I think for my next attempt I’m going to double it and see what that does, since my household likes good, thick layers to chomp through.

    I made this tonight. My store didn’t have 15oz cans of crushed tomatoes, only 28oz, so that’s what I used. I had the perfect amount of sauce, per the instructions. My impression is that if I had used a 15oz can like the recipe calls for, I believe there would have been not enough sauce for the last layer. I cooked the noodles to just shy of al dente and now the lasagna is relaxing in the fridge to bake tomorrow. The sauce is delicious (I did adjust seasoning and salt per my taste-as-I-go, but doesn’t everybody?) and I’m looking forward to sharing it with a group tomorrow night! Thank you for the great recipe!

    I’ve made this recipe a few times. Instead of a full puns of hamburger, I use 1/2lb hamburger, 1/2lb veal and 1/2 lb of the sweet Italian sausage. Best recipe ever!! I definitely suggest adding a little more sauce so you have a little extra for the last layer.

      I see you posted this question a few days ago so I guess I’m a little late. However I always make my lasagna a day in advance and bake it the following day. In my opinion, as well as my family, it tastes even better!! It gives all the flavors time to blend together for a delicious meal with the added bonus of all the pots used to prepare it were washed after it was prepped!

    This was absolutely delicious! I followed the recipe exactly and the only problem I had was that a regular baking dish is not deep enough to do all of the layers…you need a deeper lasagna dish. Also, although I baked it five minutes longer than recommended, it was not quite hot enough for me….certainly cooked and everyone raved about it but it could have used another five minutes.

    Good, except that if you follow the recipe and use 1-1/2 cups sauce for the first, second and third layers, there’s none left for the top layer. Zero. Just came back here to see if maybe I missed something, but I didn’t. I’ll salvage the top layer with some Newman’s Own I have in the fridge and bury it with enough mozzarella and parm that probably nobody will notice, but be forewarned, and additional 8oz or so of tomato sauce would do this recipe good. Otherwise, quite tasty.

    1. Agreed. I thought the original amount wasn’t enough. Instead of 15oz of crushed tomatoes I used 28 oz San Marzano crushed tomatoes. Lots of sauce left over. 🙂

    There was an old version which used UNCOOKED lasagna noodles which I loved at the time, and wonder if this can be tweaked to make it without cooking noodles? Such a nice shortcut. The meat sauce looks very familiar and tasty, with added fennel seed.

      You can if there’s enough liquid in the dish and you don’t fill it to the very top so that the dry pasta can expand. I do it and add about a half a cup more crushed tomatoes to the sauce bi also don’t add the cheese to the top and nail the lady 15 min.
