Cabbage rolls.  They’re pretty tasty.  But, if you’ve ever tried to make them, then you know they can be quite tedious.  They’re cabbage leaves stuffed with a flavorful beef and rice filling; smothered in a sweet and tangy tomato sauce; and baked until tender.

This recipe has all those flavors in easy to make form.  Soup!

This soup has a rich, sweet, and tangy tomato based broth.  It’s loaded with vegetables.  And, it’s hearty from beef and rice.

It’s a perfect healthy cold weather meal.  A huge 2 cup serving has less than 250 calories, but you’d never guess that.

This recipe makes a lot of soup.  And, that’s a good thing because this soup makes great leftovers.  The hubs and I had it for dinner one night, then made several lunches out of it.

As the rice sits it will keep absorbing more of the broth.  So, the leftovers will be thick like a stew.  I loved it.  But, if you prefer a thinner soup consistency, you may want to add a little more broth or tomato sauce to thin it out a bit.

Unstuffed Cabbage Roll Soup Recipe

Ingredients
 

  • 1 lb. extra lean ground beef I used 96% lean
  • 1 medium yellow onion chopped
  • 3 garlic cloves minced
  • 5 cups chopped green cabbage about half of a medium sized head
  • 4 cups 32 oz. low-sodium beef broth
  • 3 cups tomato sauce (24 oz.)
  • 1 cup shredded carrots
  • 1/2 cup uncooked white or brown long grain rice
  • 2 dried bay leaves
  • 3 tbsp. packed brown sugar
  • 1 tsp. salt
  • 1/2 tsp. dried oregano leaves
  • 1/2 tsp. ground black pepper
  • 1 1/2 tbsp. lemon juice

Instructions

  • In a large soup pot, add the beef and place over medium-high heat. Break it apart with a wooden spoon. Add the onion. Cook about 8 minutes until the beef is brown, stirring occasionally.
  • Add the garlic. Stir and cook 1 minute.
  • Add the cabbage, beef broth, tomato sauce, carrots, rice, bay leaves, brown sugar, salt, oregano, and pepper.
  • Bring to a boil. Then, reduce the heat to simmer and cover the pot. Cook until rice is tender (25 minutes for white rice and 45 minutes for brown rice).
  • Remove the pot from the heat. Stir in the lemon juice. Let the soup rest uncovered for 10 minutes to thicken up before serving. Remove the bay leaves before serving.

    Can’t believe I haven’t commented before, this is on regular rotation when the weather starts getting cooler. I use ground Turkey and chicken broth. I sauté everything in instant pot, add some broth to deglaze the bottom, then add everything else in and stir. For white rice I do 4 min high pressure, 22 for brown rice, and then 10 min natural pressure release. Is always a big hit!

      I made this soup tonight and it was delicious! Easy to make and a wonderful flavor. I used to make the rolls but my son wouldn’t eat the cabbage. I then started to make a casserole and he would eat that. We he is in his 50’s now and that is still the only way he will eat cabbage. Maybe he will like this soup. I want try it on him next time. This time it’s all for me!

    I made this! I added three more cups of stock because I wanted a more soup like consistency. It also needed more salt. But it hit my craving just like my grandma used to make!

    My family really enjoyed this soup. It was really good the day I made it and again as leftovers. I may add a little more rice (and liquid for it to absorb) next time….but it is not needed, just a preference.

    I love this soup and have shared the recipe with friends. My mom always made them and this recipe tastes just like her roll-ups. I added more vegetables, celery, 2 cups of fresh spinach and fresh green beans, YUM!

    This is a family favorite – even my young kiddos love it. After a few years of making this, there are a few tips/variations I’d suggest. I thinly slice and then chop the cabbage. I add the carrots and cabbage to the beef and onion mixture and sauté for a few minutes to help soften them in the cooking process. We also add a teaspoon of hot Hungarian paprika (or regular paprika). In addition to the lemon juice at the end, I add a Tablespoon of white wine vinegar. Finally, I cook the rice separately and then spoon the soup over rice in bowls.

      This was excellent, followed the recipe exactly, apart from using the food processor for the cabbage (my basically adult boys prefer cabbage in coleslaw form). It was delicious, everyone enjoyed it thoroughly. Thank you for the recipe.

    This is my go to recipe for cabbage roll soup. It is so much easier then preparing cabbage rolls. I do add chopped green peppers (wonderful flavor addition), and sometimes use a jar of spaghetti sauce instead of straight tomatoes. The lemon juice makes such a difference!! Thanks for such a great recipe.

    I’d been craving stuffed cabbage for a long time but it’s a pain to make. This tastes just like the stuffed cabbage of my youth. I did need to improvise a bit, but the recipe seems flexible. I added about a tablespoon of red wine vinegar to get more of a sweet and tangy flavor. I had only one can of beef broth so I used chicken broth for the balance, and used crushed tomatoes since I didn’t have sauce. Delicious!

    We loved this dish. It is better than a cabbage roll because of the wonderful broth. However, I cooked the cabbage, etc. without the rice, until cabbage was tender. I was using pre-cooked rice and knew that it would not have to cook for 25 minutes.

    Next day I added a little chicken broth (was out of the beef) and it was still delicious.

    Made this with a lot of ingredients fresh from the garden, homemade tomato sauce, garden cabbages, etc. The dominating flavors are beef and tomato, so it’s a similar flavor to a lot of other beef/tomato soups. I added a lot more of the spices and it still feels like it’s missing a little something, but overall it’s tasty.

    Absolutely delicious! I did add a little more brown sugar to taste as it seems to cook out as it cooks. Tastes exactly like cabbage rolls, but much easier for sure! I paired it with some crusty bread and fresh fruit.

  17. I made this last night, but left out the brown sugar and lemon juice. I used a 28 oz can of crushed tomatoes, a 14.5 oz can of diced tomatoes, 1 large bag of shredded cabbage with carrots already in it. Salt, pepper, parsley, oregano, basil. It was delicious.

    Love, love, love this! So easy. I cut back on the sugar per another cook’s suggestion, and used slightly less tomato sauce (my family are not fans of too much tomato, but my husband loved this) and it was perfect. So filling, healthy, and tasty, Checks all of the boxes and more!

      I’ve been making a version of this soup for years. I absolutely love it!!! I use onion powder and garlic powder, because my son doesn’t like onion, he and I are the only ones in the family that eat it. I use tomato juice, a little katchup, some Worcestershire sauce a can of tomato soup. I’m craving it right now.
      I actually prefer this soup to stuffed cabbage rolls.

    I made this following the recipe with the exception of using 2 tablespoons of brown sugar instead of three based on what other comments said, just to try and save some added sugar. It was delicious! My husband loved it and said it had great flavor as well! It is hearty, yet healthy, and makes a lot of soup. I’m wondering… does it freeze well? Wasn’t sure because of the cabbage. Thank you so much for sharing this wonderful recipe! We will enjoy it on many cold days to come!

    1. Very good soup just made it today, my husband will not let it rest the 10 minutes so it can thinking up. Of course with my seasonings it came out excellent.

  22. I just made a pot of this soup. it is so good and easy to prepare. the only change I made was instead of 24 oz. of tomato sauce I used 24 oz can of crushed tomatoes.

  23. Used store cole slaw mix of cabbage and carrots. Works great and saves time. And yes you can use tomato soup or a mix of sauce diced tomatoes etc.

    I used a mixture of ground beef, pork, sausage. Did NOT add sugar or lemon juice. Used TOMATO SOUP and NOT Sauce. Also, I added seasoning of Marjoram and thyme. Excellent!

  28. Excellent for Soup Season and building up your immune system. I discovered lean “Sirloin Ground Beef gives it more flavor then Chuck beef. I didn’t overdue on the seasonings, but just a hint of that “Mexican Oregano gave it a kick
    and last added Sriracha Chile Sauce separately from the pot to my soup mug for some heat.

  30. Has anyone cooked the rice separately and added it at the end? I am thinking the soup wouldn’t get as thick and am afraid it would be too runny. Great recipe, BTW, I have made it several times. But my hubby wants to try serving it over the rice. Thoughts?

    1. I regularly use a little ground rice to thicken soups. Just grind a few tablespoons of rice in a coffee grinder if you want to thicken the soup to serve over rice like a stew. Also adds a nice depth of flavor.

    I made this soup last night for supper. During the Covid 19 quarantine it was hard to find tomato sauce, but did find tomato sauce with Parmesan. While cooking I gave it a taste and thought it needed more tomato taste. I did have a 14.5oz can of diced tomatoes which I added along with the juice. It was awesome. My daughter said it tasted like ravioli sauce. When I make it again, and there will be again, I’ll make sure I have tomato sauce.

    Making as I am writing this. This recipe is more like the Real cabbage rolls than any I’ve seen so far… My husband is pure Czech, so I am very familiar with the Stuffed Canbage roll recipes. The only different herb I added was ground fine caraway seed. Makes a big difference as far as flavor goes. And I always add to my cabbage rolls.

  33. Recipe looks good. I make this soup but don’t use lemon or brown sugar. I used 1 can of beets that I liquify in my blender. Gives a good old world taste to it.

    1. anybody use tomato soup instead? Going to try and substitute as my mom always made piggies with it. Will see how it goes!

  36. Great recipe! I had a humongous head of cabbage to use up. I am watching my carbs, so I made a few adjustments to suit my diet. I used cauliflower rice in place of rice, omitted the carrots, used Rao’s low carb tomato sauce and Truvia’s brown sugar blend.

    1. Maybe the acid balances the sugar? Hubs’s grandma always put a shot of vinegar in the pan with her stuffed cabbage rolls (gołumpki) and she didn’t use sugar or tomato sauce. A lot of vinegar in their Polish-Ukranian kitchen. 😀

      This recipe was delicious, but I have to admit I didn’t follow it precisely. I didn’t have 3 cans of tomato sauce, so I used a can of tomato soup and a can of diced tomatoes. I also wasn’t sure about 3 T of brown sugar, so I only used 1. It was very good and in my opinion did not need more sweetness.

    3. I was afraid of ruining the whole pot, so we sprinkled a little lemon juice in our bowls and it was good.

    I love this recipe. It is delicious and so much easier than making cabbage rolls. It makes a wonderful meal on a chilly Fall or Winter day. My 10 year old even packs the leftovers in his Thermos for lunch at school.

    This is so good. I am on severely restricted fat diet due to chronic pancreatitis, and am always searching for tasty super low or no fat recipes. This is one of the best. I made it with ground turkey breast and chicken broth to keep the fat even lower.

      The only 2 in my family that eat unstuffed cabbage roll soup are my youngest son and myself. My son doesn’t like onion so I use onion powder, I’ve never added lemon juice, but I do add a little sugar to cut the acidity, but not as much as this recipe calls for. Interesting how one reviewer used cauliflower rice instead of rice, I may try that sometime. I make an even larger amount than this recipe because we want tons of leftovers.

    This soup is amazing! I would definitely add the sugar and lemon juice. Gives a lovely and important depth to the flavor and when you think about the servings this gives, it’s less than a teaspoon of sugar – less than 15 calories per serving! If you are used to plainer food, leave it out, but the depth and complexity it brings, I say it is essential! Thank you for such a wonderful recipe! Now a family staple.

    I just made this tonight, I’m on a low-calorie diet and have been getting tired of my usual fare. My only regret was not knowing about this sooner! I doubled the recipe to have some for lunch throughout the week. It’s so thick and flavorful. Definitely a keeper!!

    This is a favorite in my house. I do change it up just a bit. I don’t add the brown sugar and instead of adding rice (my husband and daughter don’t like rice), I add orzo noodles. They look like rice so it doesn’t change the recipe.

    I made this and stuck to the recipe. I love it! I will probably add more broth when reheating just to make it more “soupy,” but definitely a keeper!

    What can I do to “kill” the sweet taste?

    1. I didn’t add the brown sugar to mine. The sugar is added to reduce the acid from the tomato sauce. If you get heart burn then you can add a tablespoon but if sauce doesn’t really bother you then you don’t really need to add it

      1. You always add brown surgar to tomato sauces because of gerd and heartburn it does cut the acid I put it in every tomatoe sauce dish you learn how much is good and how much is to much.

    This is a wonderful recipe .. all the flavor of stuffed cabbage in a fraction of the time. This is going to be my ‘go-to’ (un)stuffed cabbage recipe. LOVED it!!

    1. Oregano or thyme about 1/4 tsp (or to taste) of either. Personally I use both in this kind of soup and add 1 bay leaf.

    I admit, I made some changes. I used the entire head of cabbage because I love cabbage and you can never have too much cabbage. It turned out to be … too much cabbage. I also used crushed tomatoes instead of sauce (28oz can) and added a good dash of worcestershire sauce (since I add that when I make the real deal) and I forgot to add the lemon at the end. So, small changes.

    I was not exactly delighted with this. It was OK but the broth had too much of a tart/sharp taste for me. I couldn’t put a finger on it.

    HOWEVER – it tastes fantastic as leftovers. I think the starch from the rice sort of oozed into the broth and thickened/mellowed it overnight. It went from being “Not sure why I am saving this” to “I’m going to heat up a second bowl!”

    So it’s a keeper. I will 1 1/2 times the amount of broth/tomato next time so I can use the full head of cabbage. Because I love cabbage.

    Anyone who doesn’t like this, be sure to try it again the 2nd day.

    Loved this recipe! It was so delicious & filling on a cold January night! We added a glop if sour cream right before serving & that went very well. Also, a sprinkling of caraway seed might add to the flavor.

  55. Can this be adapted to ground turkey instead of ground beef? Would I use chicken broth? What other alterations would be required?

      I use ground turkey and it taste great. I still use the beef broth. I think it taste better than usin the chicken broth. I put in a splash of worcestershire sauce too.

  56. I’m going to make this with the rice separate so it doesn’t explode and get mushy. I do the same thing for jambalaya. It always turns out great! Thank you for the recipe.

    Thank you for a great recipe!

    I have congestive heart failure so I make my own broth and instead of salt I added 1/4 each of marjoram, rosemary, thyme, oregano, basil, celery seed and red pepper flakes for a little kick. I don’t eat rice so I put riced cauliflower in the dish and poured the soup over it. It came out delicious!

    Absolutely love this soup! It makes so much so I generally cut the recipe in half and eyeball the ingredients. I usually always add a splash of white vinegar (in lieu of the lemon juice) and it comes out fabulous every time! As one commenter said, it’s a great idea to keep the rice separate and add to the bowl to avoid mush!

    Tastes just like the last bowl of a huge pot of stuffed cabbage!

    How would it be without the rice? I know rice is a staple in cabbage rolls, but we are trying to eat more low carb meals and I would like to try this soup minus the rice and brown sugar. Thoughts?

    1. I made this without the rice and it is fantastic……..sprinkle a little parm cheese on top …..sometime just make a low carb grilled cheese sandwich……………..If you want cook the rice seperatly and just add what you want if you so desire.

    2. It would be great even without rice and brown sugar. Then it’s called Healthy Unstuffed Cabbage Roll soup. I make it that way all the time!

    3. You could try cauliflower rice. It usually takes less time to cook, but it will give you the same feeling as the rice. You will also have to thicken it another way since it has less starch from the rice. I think they sell it just about everywhere now but I like Trader Joe’s product.

  60. I am trying to go “sugar free” and I’ve made this soup so many times. It is delicious and my husband who would prefer not to have soup for dinner even loves it! I’m wondering how you think it would be without brown sugar? I love the sweetness and flavor from brown sugar. I wonder if it’s better to use brown rice and just take my portion(s) out before adding sugar scaled back? Welcome your thoughts and thanks for a delicious recipe!

      The idea of putting the sugar in is that it cuts the acidity of tomato base in the soup. Sugar always a staple in any tomato base dish. Moms old secret, works like a dream. 🤗

    This recipe is one of the best soups that I have made in a long time. Followed the recipe pretty much by the letter except didn’t have lemon juice or brown sugar so omitted those. Was absolutely delicious. Can hardly wait until dinner tomorrow. Thank you so much for sharing this recipe. It is definitely a keeper.

    Used pork instead of beef. May substitute sauerkraut juice for lemon juice (and sugar?) next time.

    So hearty and so much easier to make than stuffed cabbage!

    This was awesomeness in a bowl. As I am fond of say… it tastes like more! I thought it was too sweet when I tasted it while cooking but the fresh lemon juice at the end really balances out the sweetness and brightens up the soup. Had a small bowl for a late lunch and will have another tonight, perhaps with a grilled Rueben sandwich. Mmmmmm cabbage goodness in all it’s forms1

    1. I don’t think that is red bell pepper, it looks like shredded carrot to me.

    My mom used to make this we called it “Sloppy Golumpkis” ( not sure of spelling). But this takes the cake. Your recipe is so much more flavorful and we all loved the addition of more veggies. It was simply delicious!

    Outstanding soup! I made a few changes based on how I make stuffed rolls. 50/50 beef and pork. Used homemade beef broth and fresh oregano, parsley and thyme. Eliminated the sugar. Big hit with my teen–especially after his waterpolo practice. Thank you for sharing. Excellent!

    Just made this, and so excited that my girls LOVED it! I thought it was a bit too sweet (maybe just 2TBS sugar would work) but am so happy to find a way to get cabbage into my kids. Agree that it could handle the addition of peppers and other spice experimenting, but it’s easy and great as is!!

    I just made this soup and I love it! I may try adding the rice a little later next time since I think the cabbage takes a bit longer than the time the rice needs to cook. I may also try adding some golden raisins, too.

    This soup is delicious! I am now making it for the third time this month for my mother who just had surgery! My boyfriend, who was sure he wouldn’t like it because of the cabbage, loves it also!     Made this yesterday, 09/29/2016. Spiced it up with just a little bit more of the spices , but this was outstanding. I had no brown sugar but used a 1/4 teaspoon of granulated sugar. This is a perfect dish for a cold rainy day like it was yesterday.

    Seriously, this might be one of the best soups I have ever eaten! Even my kids devour it! I use ground turkey and add a bit of extra brown sugar so you can taste the sweetness.

  73. I made this last night. I followed the recipe exactly except I only added 1 tbsp of brown sugar, but honestly, it was a little bland. I was able to fix it by adding a few things. First, I added a sauteed green bell pepper. Then I added a tbsp of Worcestershire sauce and a tsp of paprika. It was excellent after these additions and even better the next day!

      I left the brown sugar out as we are diabetic and it’s not something I use in stuffed cabbage either. It’s just delicious. Anyone who loves cabbage should really enjoy this thick soup….It’s so easy and quick. Enjoy !!

    I have made this soup a few times in a crock pot. We love it . But, I keep the rice separate because it does turn to mush. We just put the rice in a bowl and add the soup on top

    This is a delicious soup, I made similar , I placed all my ingredients in my crockpot on low 5 to 6 hours it turns out very good

    1. When did you add the rice? I was wondering if I should add
      More liquid (broth) to compensate for cooking the rice? I think the dish will be tastier if the rice is cooked with it

    THIS was delicious, followed recipe exactly but added 1 small can mushrooms (sorry, I add them to everything without even thinking) and a few shakes of crushed red pepper…. WONDERFUL! Savory and sweet, hearty yet light… Thank you!!!

      I have’t tried it. But, I would imagine it could be done. I think if the rice was cooked in a crock pot for 8 hours, it would probably turn to mush. So, if I was going to try it in a crock pot, I would probably try adding the rice about half way through the cooking time.

      1. When cooking in a crock pot, I would suggest cooking the rice separately, adding a scoop of rice to the bowl then ladle the soup over it. 😀 I also like corn with cabbage, so I’m going to add a little to the soup!

    I love cabbage in soup. It adds such wonderful flavor and sweetness! I will definitely try this recipe! Thanks for posting it!!

    On another note, I use my decice vertically and in this position, a popup ad blocks part of your recipe. I have to keep scrolling up and down to check on ingredients. I press the X which usually makes ads go away but it didn’t work here. The ad goes to the side when I use my device horizontally, but then I can’t see the whole recipe at once like I can with a vertical view. Any suggestions?

  80. Stuffed cabbage is by far my favorite recipe my mom makes and one of the few that I have tried to recreate at home. It just seems like so much work and if it didn’t come out like my mom’s I would probably be devastated. But this unstuffed cabbage soup looks like it would be a perfect match without all that extra work. I will definitely be trying this soon!

      Hi Jessica,, this cabbage soup is SOO easy and quick to make, and delicious !! Once you have done all your prep. It’s throw it together and let it simmer. I have ALWAYS cooked everything this way ( prep first) and believe me it’s the best way, and if you follow a recipe, you’re less apt to forget any ingredients. Good luck.

  81. I love everything about this soup. It’s the perfect comfort soup, and I love cabbage but it’s so under utilized!

    1. Hey Jodie! We gobbled it up within a week so I didn’t get a chance to freeze any. But, I really think that it would be just fine for freezing. I would transfer it from the freezer to the refrigerator for a day to defrost. Hope you like it!

      Yes, it would freeze fine. I’m making it right now and will freeze some if there’s any left. Usually make the stuffed cabbage but it takes so long as I usually make about 45 of them. This dish is simple and yummy. Enjoy !!
